the major difference is that one is a title given to someone with a particular academic degree, and the other is a title given to someone with a particular job. First of all, "dr." is a title given to someone who has completed a doctoral degree, which can take from 4 to 10 or more years beyond the bachelors degrees. It can include many at universities and colleges who have earned doctorates, but it can also include dentists, physicians, or religious leaders who have earned a doctoral degree. You don't have to work at a college to be dr., but many at colleges and universities are doctors.
Professor is a title given to someone who is on the faculty at a university, regardless of the degree that they may hold (although it is hard in most fields to get a faculty job without a doctorate).
There is one more complication, which is that at most universities, faculty on permanent contracts (not those who just teach one or two classes at a time), go through a series of promotions, from assistant professor (the lowest level) to associate professor, to full professor, also called professor. So officially not all of your "professors" may hold the actual rank of professor, but you still call them professor.
The rule of thumb is that no one will be offended by being called professor, so you can safely call anyone who teaches you that. If you know that the person is "dr.", you could also call them that; if you don't know, and you call everyone dr., those who spent 10 years earning the degree may get a little offended when you call others who haven't done that dr.
Don't, out of confusion, just call your teachers in college mr. And mrs. That tends to grate the wrong way with most of us! Professor is always the appropriate fall-back.
